Spaghetti with garlic, parmesan and balsamic vinegar
The addition of balsamic vinegar to this traditional spaghetthi aglio e olio adds a delicious tanginess making this meal especially flavorful.
- 500 g spaghetti
- 4 cloves garlic
- 1/3 cup olive oil
- pinch of salt
- 1 cup Parmesan grated
- 2 tbs balsamic vinegar
- freshly ground black pepper
- some finely cut parsley
Boil the spaghetti in water with plenty of salt.
Lightly sauté the garlic with the olive oil for seconds.
Be extremely careful not to burn the garlic because then it becomes bitter.
Add three tablespoons from the water where the spaghetti is boiling and stir in the balsamic vinegar.
Drain the spaghetti and combine with sautéed garlic and the parmesan. Add salt, pepper, parsley and serve.
