Tzatziki - the famous yogurt garlic dip

Learn how to make the best tzaziki recipe. Perhaps the most famous Greek dish after Moussaka, Tzatziki will win your heart & your palate. You can make it as spicy and strong as you want ... depending on your taste.

Ingredients:

1 small cucumber
1,1/4 cups. strained yogurt
3 cloves of garlic, minced
2 tbsp chopped fresh mint
2 tbsp chopped fresh dill or parsley
salt and freshly ground black pepper
mint or parsley and dill for garnish
olive oil

Procedure:

1. Shred or grade the cucumber in thin slices and place it strainer with plenty of salt. Leave it for 30 minutes.
2. Rinse the cucumber under running water and let it drain well. Wipe the excess humidity with a kitchen paper or a clean cloth towel
3. Mix the yogurt, garlic, the  herbs and pepper.
4. Add the cucumber and stir.
5.Sprinkle with herbs ( & a little paprika if you wish) and drizzle with a little olive oil.

Tips

The perfect side dish. It goes well with fried potatoes, fried or baked zucchini, any kebab or grilled lamb, or simply with toasted bread and olives.
