Baked Sole Fillets

This fish dish is a perfect of example of quality ingredients, prepared simply to highlight the freshness and to maximize flavor.

Ingredients:

1 kg of small sole, no heads or skin
salt & pepper
juice of 1 lemon
3-4 tbs of butter
parsley, finely chopped
1 -2 tomatoes sliced
1 lemon sliced 

Procedure:

Preheat oven at 180° C.

1.  Wash and drain the sole well. Sprinkle with salt and pepper.

2.  Place in an ovenproof dish. In a small bowl, dot with butter and sprinkle with lemon juice.

3.  Bake in the oven for half an hour (15 minutes per side).

4.  Five minutes before you remove from oven, cover with tomato slices and sprinkle with parsley.

Tips

Serve with new potatoes, a mixed salad and some crisp white wine.
