Cod Stewed in Tomato
This is a delicious and healthy fish recipe that is so easy to make.
- 1-1 1/2 k of cod, cut into pieces, soaked in water overnight
- 2-3 onions, finely chopped
- 1 kg of tomatoes
- 1 cup of olive oil
- 2-3 kg of potatoes, cut into wedges
- 2-3 cloves of garlic, sliced
- 2-3 bay leaves
Cook onion in a pan with ½ glass of water.
Once all the water has been absorbed, add the sliced garlic and the olive oil.
Sauté the onion and garlic lightly then add the tomato.
Simmer for 10 minutes.
Add the potatoes and just enough water to cover.
In 20-25 minutes, add the cod. If necessary, add a little water.
Cook for a further 20 minutes until the potatoes are done and the fish has cooked through.
