The seed of the Mediterranean stone pine tree "Pinus pinea". Pine nuts are cream coloured, approximately the size of a lemon pip and with a slightly sweet, resinous flavour and oily texture. They are sold shelled and are popular in Middle Eastern, Greek and Italian cuisine, and are a key ingredient in pesto sauce.
