Sea urchin

A spherical, spine-covered animal "Paracentrotus lividus", up to 8 cm in diameter, which lives on rocky coasts in all oceans and seas, and can be black or dull shades of grey, green, red or purple. They are opened when alive and fresh and the orange coloured ovaries inside are removed and either eaten raw as a delicacy or used as a garnish.
