Raw Artichoke and Baby Fava Bean Salad

You can add Greek slit green olives to this delicious and refreshing salad or shave a little parmesan or Cretan graviera cheese over it.

8 small artichokes, cleaned, without their stems, thinly sliced
1 pound (500 gr.) fresh baby broad beans, shelled
2 to 3 scallions trimmed and thinly sliced
1 small bunch dill, finely chopped
1/2 cup extra-virgin olive oil
Strained juice of 1 large lemon
Salt and pepper to taste



Boil the fava beans for 5 minutes and drain. Combine artichokes with broad beans, scallions, and dill in a serving bowl.

Whisk together the olive oil, lemon juice, salt and pepper and dress the salad. Serve immediately.


Be careful because some people are allergic to fava beans
