Rooster with Pasta
The pasta in this traditional Greek dish becomes even more delicious if it is combined with the sauce from the rooster in the pot half an hour before served.
2 kg rooster cut in portions
2 large onions, grated
1 garlic minced
3/4 cup olive oil
2 tbs butter for the spaghetti
cloves, whole and crushed
salt and pepper
3 large tbs tomato puree
700 gr. spaghetti No. 3
kefalotyri (hard cheese) grated
1. In a shallow pot pour the oil and sauté the poultry then add the onion and the garlic.
2. Add the salt and pepper, then pour in 3 – 4 glasses of water, the tomato puree and all the spices.
3. Cover the pot with the lid and leave to cook in a medium temperature for approximately 2 hours. Add more water and spices if necessary, to give it a spicy flavor. The sauce in the pot should be thick, red and dark from the spices and rich enough for the spaghetti.
4. Boil and drain the spaghetti and add butter, while spaghetti is still warm in the pot. Serve on the plates with plenty of sauce and grated cheese (kefalotyri).
