Salted Codfish with Vegetables
In this dish, salt cod is tender and fragrant with the delicious herbs and vegetables as an accompaniment.
- 1 kg salted codfish
- 300 gr spinach
- 1 bunch fresh onions
- 1 bunch fresh garlic
- 1 bunch white beets
- 1 bunch sorrel
- 1 bunch fennel
- 1 small cup tomato juice
- 200 gr olive oil
Cut the codfish and let it desalinate from the night before changing the water 3-4 times.
Wash and cut the vegetables in large pieces.
Brown the vegetables in the oil and add the tomato juice.
Let them simmer with a bit of water for 10’ and then place over them the pieces of codfish.
Boil them for a little while longer, until there is no water.
