Fried Aubergines

This savory eggplant appetizer is served with garlic sauce or tzatziki.

Ingredients:

1 kg aubergines
oil for frying
flour
salt & pepper

Procedure:

1.  Select round aubergines (eggplants) and cut into slices.

2.  Drop into salted water for ten minutes. Wash, drain and dry.

3. Heat oil in a pan. Lightly flour the aubergines, one by one, and deep fry until they become golden brown.
