Marinated Anchovies

Marinated anchovies are an all time favorite; a perfect balance between the vinegar and the rich sweet taste of the fish.

Ingredients:

1 kg anchovies
½ kg coarse salt
3-4 lemons or 150 ml vinegar
200 ml olive oil
pepper

Optional
parsley
rosemary
vine leaves
several kinds of pepper

Procedure:

Clean the anchovies and remove the heads and the backbone.

Wash and drain them and put them in a bowl with coarse salt for about 2-3 hours. 

Remove the fish filets from the salt and place them in acid lemon or vinegar solution preferably for about 2 hours.

Discard the lemon or vinegar solution and add extra virgin olive oil and the fragrant herbs, letting the fish filets to marinate for 2-3 hours.

Serve on a small platter, in a tidy line or any sort of decorative position, bath in olive oil and season with fresh pepper (green or black).

*Keep in mind that the fish cooks in the acid, so do not leave it for too long because it will become really dry!

Tips

Serve as an appetizer to accompany ouzo or tsipouro (a strong distilled spirit containing approximately 36% alcohol per volume).
