Honey Bread

This is a honey flavoured bread that could be served with meals that have a sweet or sweet and sour taste and it could also be served with tea or coffee. It makes a nice cracker as well, where you could cut it into thin slices and place them on a baking pan in the oven. When they are cooled, keep them in a tin box to maintain them longer.

Ingredients:

500 gr. white flour
200 gr. whole wheat flour
1 teaspoon salt
45 gr. fresh yeast or 3 teaspoons dry yeast
1 flat teaspoon cinnamon
1/2 flat teaspoon clove
1 full teaspoon ginger
200 gr. honey
150 gr. walnuts slightly roasted, chopped
70 gr. light colored raisins
1 tablespoon melted butter or olive oil
sesame

Procedure:

Preheat oven at 170 - 180°C.

1.  Combine all the solid ingredients and add the warm honey, melted not hot.

2.  Continue by adding warm water and knead until you have an elastic dough.

3.  Add the raisins and the walnuts and continue to knead until you have a smooth dough.

4.  Smear the butter or oil all around and leave the dough to rest and rise a little.

5.  Shape two short loaves and roll them on sesame seeds so that the dough is totally covered.

6.  Place the loaves in a large pan covered with non-stick cooking paper and leave the loaves to rise. Pierce and bake.

 

Tips

Leave the bread one day before cutting, because the honey and all the spices need to remain in the bread for a while in order to bring out the flavors. That is the maturing of the flavor and its completeness
