Grilled Fish Cakes
Grilled Mediterranean fish cakes served with crispy courgettes are a wonderful summer meal.
1 kg fish cod, or any other mild white fish cooked
1 tsp olive oil
- 1-2 eggs,
- some minced garlic,chopped
- 2 tbs stale breadcrumbs or crushed rusk
- 1 cup of flour
- 1 tbs corn flour
- finely chopped parsley,chopped
- salt & pepper to taste
Filet the larger fish and cut as finely as possible.
Combine all of the ingredients together and knead the mixture.
Using a tablespoon remove portions to form individual fish cakes.
Coat each cake in flour and grill.
