Grilled Fish Cakes

Grilled Mediterranean fish cakes served with crispy courgettes  are a wonderful summer meal.

Ingredients:

  • 1 kg fish cod, or any other mild white fish cooked
    1 tsp olive oil
  • 1-2 eggs,
  • some minced garlic,chopped
  • 2 tbs stale breadcrumbs or crushed rusk
  • 1 cup of flour
  • 1 tbs corn flour
  • finely chopped parsley,chopped
  • salt & pepper to taste

Procedure:

Preheat grill.

Filet the larger fish and cut as finely as possible.

Combine all of the ingredients together and knead the mixture.

Using a tablespoon remove portions to form individual fish cakes.

Coat each cake in flour and grill.

Tips

You can serve them on a bun with a home made tartar sauce.
