Goat Meat Casserole

This is a simple traditional stew dish that comes from Sfakia Crete that is full of flavor.

Ingredients:

1 1/2 kg mutton (goat meat)
1 cup olive oil
2 onions finely chopped
salt, pepper
juice from 1 lemon

Procedure:

 

1.  Cut the meat, rinse it, drain the water and place it in a casserole with the oil, onion, salt, pepper and lemon.

2.  Let it simmer on low heat for approximately 2 hours without adding any water.

Tips

You may add the head of the goat while cooking it in the casserole to intensify the flavor. Discard before serving.
