Goat with Artichokes
This traditional recipe from the Greek island of Skopelos can also be made with beef.
1 kg of goat from Skopelos cut in portions
12 medium artichokes cleaned
1 bunch of spring onions sliced
1 bunch of dill finely chopped
1 tablespoon of tomato paste
2 fresh tomatoes grated
1. Cut the goat into portions and sauté in olive oil.
2. Pour in boiling water (enough to cover the meat) and just before the goat is cooked add the cleaned artichokes. Continue to cook.
3. Add salt and pepper at the end of the cooking.
