Wild Greens (Agria xorta)

In Greece, wild greens play a vital role in our diet, each season comes with a different type of wild green that we either just boil and eat as a salad as done here, or use for filling in a pie or use in different meat stews. We consider them a delicacy even if simple.

Ingredients:

1 kg wild greens
Salt
Lemon
Olive Οil

Procedure:

  • Clean  and wash the greens, by cutting either by hand or knife the part or the stem that is too thick and hard to eat.

 1. In a large saucepan boil water. Add the greens and let them boil for about 30 minutes. In the end, add salt.

2.Serve with olive oil and lemon.

*Remember that all the nutrients are in the water left over, drink a glass of it as it will do you much good!
