Ta’liya aromatic paste for stews

Ta'liya is an Egyptian paste made from scratch and added to many stews, to help thicken the sauce and give a boost to the taste. Experiment with the way you use it and try adding different herbs and spices to it depending on what you want to add it to.

Ingredients:

20 garlic cloves, crushed
1 tsp ground coriander
1 tbsp cooking oil or butter
salt & pepper

Procedure:

1. Mix the garlic, coriander, salt, and pepper until smooth, sauté for 3-5 minutes until golden brown. Toss into a pot of boiling stew.

2. Ladle one spoonful of the cooking broth back into frying pan, stir, and toss again into the cooking pot. This will ensure that all the ta’liya is used.
