Peaches with Pomegranates and Rosemary

An ultimately Mediterranean dessert really easy to make and incredibly aromatic; caramelized peaches with rosemary and orange juice.  Do us a favor and buy peaches in season (summer), as at other times of the year they just simply don't have taste!

Ingredients:

  • 2 nectarines
  • 2 peaches
  • 2 tbsp honey
  • juice of 2 oranges
  • 1 cup pomegranates
  • ½ cup pistachio nuts, coarsely chopped
  • 1 sprig fresh rosemary
  • 40 gr butter

Procedure:

Wash, dry and cut the fruit into large pieces.

Heat the butter in a saucepan and sauté the fruit for 2 minutes.

Add the honey and caramelize for 2-3 minutes.

Add the orange juice and sprinkle with the rosemary.

Allow the orange sauce to thicken for 5-6 minutes on a low heat.

Remove from the heat.

To serve: divide the sauce into 4 small bowls and garnish with the pomegranate and the pistachios nuts.

If desired, put a few drops of Grand Marnier or grenadine on top.

Tips

After adding the honey and before adding the juice, add ½ tsp. balsamic vinegar. It creates a tasty "contrast''.
