Moroccan Glazed Carrots

Simple. Refreshing. Healthy. Tasteful. Carrots redefined. What else could we ask for? Eat as a salad, appetizer or side dish. Play around with the spices at your own risk!

Ingredients:

2 lb carrots
salt
4 tbsp olive oil
2 tbsp sugar
2 tbsp lemon juice
2 tbsp cilantro
hot red pepper, to taste
sweet red pepper, to taste

Procedure:

  • Peel and slice the carrots fairly thin lengthwise.Cut slices into 3/4" lengths.
  • Chop the cilantro

1. Cook segments in boiling, salted water until just tender. Drain.

2. Toss in pot with remaining ingredients. Serve hot as a side dish or cold as an appetizer accompanying other vegetables.
