Country Rooster with Homemade Chilopites
This is a dish you will find in many villages across Greece; most households, usually the grandmas, make their own Chilopites pasta which give this dish a distinct taste of the country.
1 country rooster about 2 kg, cut in portions
1 tbsp ground oregano
2 cloves of garlic
1 tbsp tomato sauce
1 kg ripe, fresh finely chopped tomatoes
1 cup οlive oil
2 cups home made chilopites/noodles
Some cloves - whole pimento -1 cinnamon stick Salt-pepper
1. Βοil the rooster in water with all the ingredients, except the tomato, for about 1 1/2 hour on moderate heat.
2. Add the tomatoes and continue to cook for half an hour until the rooster is tender but has enough broth.
3. Then we add the homemade chilopites, lower the temperature, stir and boil them for 5-10 minutes.
4. Cover the saucepan and let the homemade chilopites absorb the broth. Serνe with sprinkled cheese.
