Chicken Fillets in the oven with Orange Juice

This recipe requires chicken fillets, but it does not mean that you have to buy the ones that are in a packet at the supermarket, go to your butcher and ask them to fillet the breasts. Find out how they were raised, what they were fed, anything we ingest affects us so choose wisely.

Ingredients:

6 chicken fillets
3 slices of bacon sliced
1 tbsp fresh butter
juice of 3 oranges
1 orange sliced
1 cup vegetable broth
1 bay leaf
a pinch of thyme, crumbled
2 carrots sliced
½ kg small-sized onions
4 medium-sized potatoes, cut into large cubes
salt & pepper

Procedure:

 

Preheat the oven to 180°C

1. Sauté the bacon in a skillet. Transfer it to a baking pan and add some butter to the leftover oil in the skillet to lightly sauté the chicken fillets and transfer them to the baking pan, covering them with orange  slices.

2. Add the vegetables to the skillet and sauté them (onions, potatoes, carrots) using the juices of the bacon and chicken fillets. As soon as they are ready, transfer them to the pan as well.

3. Add the orange juice, bay leaf, vegetable broth, thyme, salt and pepper to the skillet and allow them to boil. Pour over the chicken fillets as soon as ready.

4. Place the baking pan in the oven and cook over medium heat for about 25-30 minutes. If needed add some water, but make sure that the sauce is thick when ready.

Tips

Free-range chickens are alawys more tasty!
