Sandwich with Formaella Cheese and Sun-Dried Tomatoes

We think sandwich making is a fine art that people either indulge in with great pleasure and creativity or don't 't understand at all! This is an example of an elaborate sandwich inspired by Greece but adaptable to anywhere; a great picnic option to accompany a local beer! Ingredients:


2 red peppers in brine
300 gr formaella cheese or haloumi sliced into thick pieces
6 sun-dried tomatoes (from a jar with olive oil)
2 tbsp dry basil and thyme
2 sprigs fresh basil
salt and pepper
fresh bread 

Procedure:

Preheat oven to 200°C

Spread a bit of oil over the formaella, add salt and pepper and grill for a few minutes until soft. If you don't have a barbeque, use one of those ribbed pans that give the impression of grilling.


Slice the bread and heat in the oven, making sure it doesn't get dry and crunchy!

Strain the peppers  from their juices and place them on the slices of grilled bread.

Add the formaella and finally the sun-dried tomatoes.  Finish off with some whole fresh basil leaves.

Tips

Substitute the cheese for another type of hard but meltable local one
