Brigitte's Quick smoked ham, onion and Sour Cream Tarte

If you are going to make home-made bread always keep a small ball of the dough in the freezer to use as pie crust when you please! This pie is really easy to make and fresh in taste!

Ingredients:

½ kg(approx. 1 pound) bread dough
olive oil
10 large onions, chopped
300 gr good quality bacon or smoked pork cut in julienne
1 cup sour cream or Greek strained yogurt
salt and freshly ground black pepper

Procedure:

Preheat the oven to 200°C or 450°F.

1. Oil a large pie pan and on a lightly floured surface, roll out the dough to a piece the size of the baking pan and place it in the pan. Brush the surface with a little olive oil.

2. Sauté the bacon or smoked pork and onions over a low heat with a little olive oil. Total sautéing time should be around 20 minutes.

3. Spread the yoghurt over the surface of the dough and on top of that spread the onion mixture. Salt lightly and sprinkle with pepper.

4. Bake the tart for 40-45 minutes, or until the dough is golden. Remove, cool and serve, either warm or at room temperature.

Tips

Accompany with a green salad, and a white wine.
