Large Lima Beans Summer Salad with Sage

The garlic and sage add wonderful aroma and intense flavor to the creamy beans.

Ingredients:

500 gr large lima beans
6 cups of cold water
1/4 cup extra virgin olive oil
1½ tbs sage, finely chopped
1 large clove garlic, crushed
extra olive oil for the dressing

Procedure:

 Place the beans in a large pot. Add plenty of cold water to top beans  and let them soak overnight.

Strain the beans and place them back into the pot.

 Add the 6 cups of cold water, 1/4 cup of olive oil, sage (finely chopped) and garlic.

On first boil, lower the temperature to moderate reading.

 Cover the pot with lid and simmer for 45 min. or until the beans are tender.

Occasionally stir the beans, then strain and sprinkle them with salt and pepper.

With a perforated spoon transfer the beans to a bowl.

Pour the olive oil over the beans and garnish with fresh sage.
