Cream of Cauliflower Soup

Cauliflower soup is one of the best tasting soups, if made well it can be a great appetizer; pass it through a fine sieve for a more refined result! Heart-warming and healthy!

Ingredients:

1 cauliflower of about 1 kg, cut in florets
1 1/2 liter home made chicken broth
1 medium dry onion, pureed
2 potatoes, cubed
2 tbsp butter
salt & pepper
½ cup fresh cream

1/4 tsp grated nutmeg

For the garnish
a bunch of chopped parsley 
crouton
bacon cut in bites

Procedure:

1. Sauté the onion in the butter, taking care that it does not get brown, and add the cubed potatoes.

2. Add the broth and the cauliflower. Add salt and pepper and let it boil over medium heat for about half an hour.

3. Mash the soup with the blender bar in the pot until it becomes smooth as velvet. Add a bit of nutmeg and the fresh cream.

4. Garnish with parsley and croutons or sautéed bacon. 

 

Tips

The same recipe can be used for broccoli or carrot soup.
