Black Eyed Beans with Spinach
Earth. Warmth. A basic black eyed bean vegetarian dish to work as a perfect week night dinner.
- 1/2 kg black eyed beans
- 1 1/2 kg spinach,rinsed and washed
- 1 bunch fresh onions, finely chopped
1 tbsp. chopped dill
- 1 spoon tomato paste
- olive oil
- salt, pepper
In a large saucepan saute lightly the finely chopped onions, carrot, dill, and the spinach.
Add salt, pepper the tomato paste and the beans.
Boil for about 20 minutes, until the sauce is reduced.
