Baked Fish in the Style of Spetses Island

This local specialty of the Greek Island of Spetses is full of flavors. It is perfect for a great summer night with a glass of wine and come fresh crusty bread.

1/4 c olive oil
2 lb red snapper fillets (or cod, haddock, halibut or yellow
pike fillets)
1 tsp. salt
1/4 c lemon juice
1/2 c olive oil
1/4 c tomato sauce
1c snipped parsley
1/2 c dry white wine
2 garlic cloves, finely chopped
1 tsp. salt
1/4 tsp. ground pepper
1/2 c dry breadcrumbs


Preheat oven at 180° C.

1. Pour 1/4 cup oil evenly into baking dish.

2. Sprinkle 1/2 cup bread crumbs evenly over oil.

3. Place fillets in single layer in baking dish; sprinkle with 1 tsp salt. Pour lemon juice on top.

4. Mix 1/2 cup oil, the tomato sauce, parsley, wine, garlic,  salt and pepper; spoon over fillets.

5. Sprinkle with 1/2 cup breadcrumbs.

6. Bake uncovered until golden brown, about 40 minutes. Remove fillets to warm platter.
