Soup with Yogurt and Mint

Simple and refreshing this healthy yogurt soup should be served chilled in dishes with a cube of ice. It is the perfect meal for a hot summer night!

Ingredients:

  • 1/2 kg yogurt (strained)
  • 4 tbs extra virgin olive oil
  • 1 clove garlic, crushed
  • 1 large courgette,cleaned and finely grated
  • 1 tbs fresh mint,chopped
  • 2-3 tsp of vinegar

Procedure:

Salt and squeeze the courgette by hand to drain its juice, which you collect in a small bowl 

Whisk the yogurt in another larger bowl for 5-6 minutes.

Continue whisking while adding the vinegar, mint, courgette  and its juice, garlic clove and olive oil.

Continue whisking for 3-4 minutes.

Place the soup in the fridge to chill.

Garnish with the chopped mint.
