Mediterranean Pasta recipe
500 gr. spaghetti
1/2 cup olive oil
1 onion diced
12 pcs cherry tomatoes
1 kg plum tomatoes, seeded and chopped
2 tbsp sage leaves
1 gr. saffron
1 tsp vinegar
1 tsp sugar
Salt and pepper
Put the oil, sage, and saffron into a sauce pan, warm slightly and then leave all night.
The following day, heat the oil and the aromatics, and when starting to smoke take out the leaves of sage and fry the onions until well glazed.
Add the tomatoes and simmer gently.
When almost ready, season with salt, sugar and vinegar, and cook until rich and smooth, approximately for 20 minutes.
Cook the spaghetti according to the package.
Pour the tomato over spaghetti.
Sprinkle with Parmesan or any other cheese of your choice.
