Fried Black-Eyed Bean Soup

These fried beans are very juicy and they are eaten as a delicious soup, served in a deep dish.

Ingredients:

  • 1/2 kg black-eyed beans
  • 1 handful rice (for soup)
  • 2-3 dried onions, chopped
  • 1 tbs flour
  • 1 cup oil
  • salt
  • vinegar

Procedure:

Boil the beans for about 20 to 30 minutes, then drain them and rinse.

Boil again some water in the pot and pour the beans so that they could be cooked on a medium temperature.

Before the beans are ready add the rice and the salt.

In a frying pan sauté the oil with the finely chopped onions, then add the flour and stir.

Extinguish with plenty of vinegar and then add the mixture in the pot with the beans.

Accompany with crusty bread.
