Cretan Tomato Soup with Bulgur and Yogurt

This is a hearty and healthy soup from the Greek island of Crete.

Ingredients:

  • 2 lt water
  • 1 cup coarse bulgur
  • 3 cups grated fresh tomatoes
  • 1 cup extra-virgin Greek olive oil
  • 1 large onion, peeled and finely chopped
  • salt, pepper
  • 1 tsp. sugar
  • 1 1/2 cups strained Greek  yogurt
  • fresh mint

Procedure:

Heat the olive oil and sauté the onion until wilted.

Add the tomatoes and bring to a boil.

Add the bulgur and water.

Simmer over low heat for about 45 minutes, until the soup is thick and the bulgur soft.

Season to taste with salt, pepper and sugar.

Tips

Serve in individual bowls, with a heaping spoonful of yogurt in the middle and garnish with fresh mint leaves.
