The culinary term for meat from bovines such as the cow, bull, bullock (young bull) or steer (castrated male 2 to 4 years old).It is prominent in the cuisines of North and South America, Europe, Australia and the Middle east, but forbidden in India. A variety of cuts are available, and these can be cooked a number of different ways.
