Water is boiled in the lower (larger) kettle and the loose-leaf tea is steeped in the top (smaller) teapot.

This method allows each person to drink the tea as they desire: strong and steeped, or light with lots of water added.

First fill the big kettle with water and place it on the stove. Then put the smaller teapot above the big kettle.

In the small kettle put black tea (the measure of black tea is a tea spoon per person). Light the stove. While the water is boiling in the big kettle the second small kettle will also be warmed up. Please notice that the small kettle contains only black tea and NO water ...yet.

After the water is boiled, pour less than half of it in the smaller teapot and let it steep for at least 15 minutes, keeping both the teapot and the remaining water in the kettle piping hot on low/med heat.

How to Serve Turkish Tea:

When serving strong black tea you must fill two thirds of the Tea Glass with tea from the top smaller teapot and add the boiling water to fill the rest of the glass from the larger kettle. As the tea is stronger the colour is dark brown.

When serving light black tea you must fill one third of the Tea Glass with tea from the top smaller teapot and add the boiling water to fill the rest of the glass. As tea is light the colour is light brown. Add sugar to taste.

In Turkey they would say: "Afiyet Olsun" that means "Bon Appétit" or "Enjoy"!
